The first is in the middle of town... in the Halles-Châtelet market, no less. Some 7 years ago, a couple who are cheese experts, the Bernats, set up their "La Fromagerie" business not far from a wine merchant. And I can promise you that it is all too clear that they are professionals ... a number of years in the Paris Rungis market has taught them to pick out cheeses of exceptional quality. I bought a farmhouse Munster and a Saint Nectaire from them and had a real feast!

The second is a new arrival: open hardly 7 months! You need to go to faubourg Bannier. Florence Arlettaz, whose husband is a wine waiter, has just opened a welcoming cheese cellar, with a fine selection of matured cheeses from Hervé Mons, a well-known MOF (Meilleur Ouvrier de France) from the Rhône Alpes region (I've already told you about his stand at the Halles market in Lyon). Florence learnt the trade from him last year. An address to bear in mind if you feel peckish around midday (it's not that long a walk from the main station) or if you want to learn what wines and cheeses go best together, in a friendly setting – but without me ;-))):
