In Holland the kaaskop or "cheese head" is the name given to the Edam mould. It is in wood encircled with metal. A cover is used to press the curds.
Which leads me to say once again that the Latin word caseus has given us all "cheese", "käse", "kaas"or "quesos". But we French with our "fromage" sit together with the Italians "formaggio" and the Catalans "fromatge" in talking more about its shape...
